Gluten Free Yumminess!!!

Spinach Egg Mushroom Ricotta Gluten Free Torte from Tula's Gluten Free Bakery.
Lovely atmosphere- very clean and relaxed.
I would definitely recommend this place!
They have pizzas, Panini's, soups, various baked goods and teas and coffee drinks.
Very tasty and reasonably priced for a gluten free bakery. I noticed that they sold loaves of bread for $7- which is less expensive than other gluten free bakeries I've been to...

Juicing for Health!

I never thought I would juice carrots or anything for that matter!
But now that my Health and diet have changed - my openness to trying new things has also changed:)
So far, I've made watermelon juice, carrot- apple juice, spinach, celery, fennel and apple juice, orange- carrot- celery... And many more- it's fun to try different combos- and since I'm avoiding refined sugars as well as fake sweeteners - the fruit juice fills in the gap for my sweet cravings:)

SCD Crackers

2 c blanched almond flour
1 egg
2 T olive oil
1/2 tsp salt
Combe ingredients
Roll out very thin
Bake 350 for 15 mins

Date coconut bread

I modified Raman Prasad's recipe from 'Recipes for the Specific Carb Diet' for Banana Nut Date Bread:
1/2 c Honey
1/2 c organic coconut oil
2 tsp vanilla extract
1 ripe banana
3 cups almond meal
1 tsp baking soda
1 cup walnut-date butter (purée walnuts and dates and water)
1/4 c. Homemade applesauce( fill 9 by 13 pan with peeled apple slices, bake at 400 for 2 hours, combine with cinnamon, honey and vanilla- mash together)
Preheat oven to 350
Bake 30 mins

I had never tried coconut oil before!
It is Amazing!
Unfortunately, coconut oil has a ton of saturated fat!!!

Specific Carbohydrate Diet

I was diagnosed with Crohn's disease on May 15, 2012.
Shortly thereafter, I learned about the Specific Carb Diet. A diet that many Crohns patients have found healing and remission in:)
It's a lot of work! But I am hoping and believing that it will be well worth the effort:)
Tonight, I made an SCD friendly omelet of 2 omega 3 eggs, half an avocado, a little spinach and 1.5 tablespoons aged cheddar.
