Date coconut bread

I modified Raman Prasad's recipe from 'Recipes for the Specific Carb Diet' for Banana Nut Date Bread:
1/2 c Honey
1/2 c organic coconut oil
2 tsp vanilla extract
1 ripe banana
3 cups almond meal
1 tsp baking soda
1 cup walnut-date butter (purée walnuts and dates and water)
1/4 c. Homemade applesauce( fill 9 by 13 pan with peeled apple slices, bake at 400 for 2 hours, combine with cinnamon, honey and vanilla- mash together)
Preheat oven to 350
Bake 30 mins

I had never tried coconut oil before!
It is Amazing!
Unfortunately, coconut oil has a ton of saturated fat!!!

Yummy in my tummy!!!

  1. Actually, the fats in coconut oil are healthy and quickly converted into energy by your body! Just make sure you're buying organic coconut oil and not the hydrogenated form of it. We actually put coconut oil into Sadie's foods sometimes to increase her calorie intake! Your body needs some fats...might as well make them the good ones!!

    1. Good to know! Thanks Christie! So far I've purchases the organic coconut oil from Trader Joes:) A little bit of that stuff goes a long way!
