Triple Berry Squash Muffins!


2 cups mashed ripe bananas (tip: slice up very ripe bananas and place in freezer bag, then thaw when ready to use for recipes:)

Raspberries, Blueberries and Marionberries equal to 2 cups.

1 c. mashed butternut squash (Whole Foods sells Organic butternut squash in a can)

1/4 c. Coconut Oil

3 Large Eggs

1/4 tsp salt

                  2 tsp baking powder

2 c. Blanched Almond Flour

1 T. Vanilla

1 t. Cinnamon

The zest of 2 lemons and the juice of 1

Bake in muffin cups at 350 for 25- 30 mins.

Berries, Bananas and Coconut Oil, Oh My!
You may want to blend your batter together in the sink...especially if you're messy like I am!


In the Future: I plan to NOT blend my berries into my batter. I really liked how these turned out, but I liked them better when I mixed the whole berries in Last with a spoon and could thus taste the individual berry flavors after the muffins were baked. The muffins made with whole berries also looked much prettier than the ones that you see pictured above with blended berries :)

Fluffy and Puffy Eggcake ;)

Grain Free, but NOT Dairy Free!

2 eggs (separate out 1 of the whites)
1/4 c. Warmed milk
1/4 c. Blanched Almond Flour
1 pinch salt
1 T butter
Aged cheddar cheese sliced

(this could easily be made dairy free using an alternate milk- like Almond Milk- some olive oil instead of butter and No Cheese)

Heat oven to 390.
Heat small 6 inch skillet(oven proof).
In 1 bowl whisk 1 egg white until white and soft peaks form, set aside.
For main batter: mix rest of eggs(1 egg plus 1 yolk) with almond flour and salt. Then whisk in warmed milk.
Gently fold in egg white with metal spoon.
Melt 1 T. Butter in hot pan.
Pour batter in and cook for a few minutes until starting to set at edges.
Place cheese slices on top.
Bake whole pan in hot oven for 6-7 minutes until puffed and golden.
Serve.

When the eggs look like this. Place several thin cheese slices (or any other toppings) on top and place in Oven.
A Little Fresh Guacamole and Pico de Gallo would taste Amazing on this!!!

Best Chocolate Chip Cooke

Grain Free, Dairy Free, (not refined sugar free because of chocolate chips)

1 1/4 c. Canned chickpeas
2 tsp. vanilla
1/2 c. + 2 Tbsp. natural peanut butter
1/4 c. Honey
1 tsp. baking powder
(a pinch of salt if peanut butter is unsalted)
1/2c. Vegan Chocolate chips

Preheat oven to 350
Combine everything except the chocolate chips in a food processor and process until smooth or use wand blender.
Add chocolate chips and pulse a couple times or stir to combine
Mixture will be sticky
With wet hands, form into 1 inch balls
Place onto silpat
Press down slightly to flatten
Bake for 10 mins
Recipe yields: 20
For best experience Serve warm- chocolate must be melted when consuming!!!;)

 
Notice how sticky and wet the dough looks prior to baking.
 
If you don't eat all of these on the same day that you make them, then You Show Great Constraint!
Make sure you place these in the fridge for safe keeping- they are made of beans;)

Chicken Rice Summer Squash stirfry

Tonight we had a lovely dinner at home- those are the best kind:)
We had some leftover Roasted Chicken that I placed in the Stir Fry Pan with fresh yellow summer squash and zucchini. I sauteed all of that in some butter :)
Then I simply added some rice that I had leftover:) and some whole foods cantina style pico de gallo
I just combined the above ingredients in a wok and voila! Delicious dinner!
We also had some aged cheddar, grapes and our favorite King Estate Pinot Gris:)

Snickerdoodles (gluten, dairy, egg, and refined sugar free)

2 C. Blanched almond flour
1/4 tsp salt
1/4 tsp baking soda
1/4 c. Coconut oil
1/4 c. Honey
1 Tbsp. vanilla
(coating: ground cinnamon)
Combine flour, salt, baking soda in bowl
Combine oil, honey, vanilla over double boiler
Add liquid ingredients to dry and stir to thoroughly combine
Using a rounded Tablespoon, scoop
out the dough, gently form dough into ball
Roll in cinnamon
Place all balls in cookie sheet lined with mat or parchment paper
Flatten with hand/ fingers
Bake 350 for 8-9 mins
Enjoy!!!

Chocolate Macaroons - no gluten, no dairy, no refined sugar, no eggs.

2 c. Shredded unsweetened coconut
3/4 c. Coconut oil
1/4 c. Unsweetened Cocoa powder
4 T. Maple syrup or agave nectar
1/3 c. Blanched almond flour

Spread coconut across baking sheet
Bake 300 for 8 mins( until lightly browned)
Cool
Over simmering water in a saucepan, place a bowl and add coconut oil to slowly melt
Turn off heat
Whisk in cocoa powder
Add maple syrup, whisk
Add coconut and almond flour
Blend with fork or spoon
Drop a Tablespoon onto nonstick cookie sheet
Place in fridge to solidify( store in fridge)
Enjoy!!!

Almond flour waffles

1 c. Blanched almond flour
4 eggs
1/4 tsp salt
1/4 tsp baking soda
1 tsp vanilla
2 T. Honey
1/4 tsp cinnamon

Whisk all wet ingredients. Then add dry and whisk again.

Add 1/2 c batter to hot waffle iron.
When waffle is ready, plate it and smother with peanut butter and put some red grapes on top( or whatever topping you like;)

Piña Colada Muffins!!!

A friend of mine gave me an amazing Almond Flour Muffin Recipe with several variations:)
I made the coconut- pineapple variation and added my own twist;)

Piña Colada Muffins
2 cups mashed ripe bananas
1 c. mashed butternut squash
1/4 c. Coconut Oil
3 Large Eggs
1/4 tsp salt
2 tsp baking powder
2 c. Blanched Almond Flour
1 c. Unsweetened Coconut Flakes
1 c. Drained crushed pineapple

Bake in muffin cups at 350 for 25- 30 mins.

(for the cherry piña colada muffins: add 1 T vanilla, 1/2 c. Roughly chopped raw cashews and 1/2 c fresh cherries, chopped.)

I liked the cherry ones better. The piña colada muffins were very bland, but Oh So Nutritious!!!

Two Egg Omelet with roasted yellow pepper, spinach, aged cheese and lox

Put a little coconut oil in a fry pan
Add two eggs- make an omelet
When omelet is almost ready, add some roasted red peppers to side of pan to heat them up and a handful of spinach
Once all is heated through, plate it and grate a little of your favorite aged cheese on top and a couple little pieces if lox:)
Yumm!!!!!
