Fluffy and Puffy Eggcake ;)

Grain Free, but NOT Dairy Free!

2 eggs (separate out 1 of the whites)
1/4 c. Warmed milk
1/4 c. Blanched Almond Flour
1 pinch salt
1 T butter
Aged cheddar cheese sliced

(this could easily be made dairy free using an alternate milk- like Almond Milk- some olive oil instead of butter and No Cheese)

Heat oven to 390.
Heat small 6 inch skillet(oven proof).
In 1 bowl whisk 1 egg white until white and soft peaks form, set aside.
For main batter: mix rest of eggs(1 egg plus 1 yolk) with almond flour and salt. Then whisk in warmed milk.
Gently fold in egg white with metal spoon.
Melt 1 T. Butter in hot pan.
Pour batter in and cook for a few minutes until starting to set at edges.
Place cheese slices on top.
Bake whole pan in hot oven for 6-7 minutes until puffed and golden.

When the eggs look like this. Place several thin cheese slices (or any other toppings) on top and place in Oven.
A Little Fresh Guacamole and Pico de Gallo would taste Amazing on this!!!
