1 1/4 c. Canned chickpeas
2 tsp. vanilla
1/2 c. + 2 Tbsp. natural peanut butter
1/4 c. Honey
1 tsp. baking powder
(a pinch of salt if peanut butter is unsalted)
1/2c. Vegan Chocolate chips
Preheat oven to 350
Combine everything except the chocolate chips in a food processor and process until smooth or use wand blender.
Add chocolate chips and pulse a couple times or stir to combine
Mixture will be sticky
With wet hands, form into 1 inch balls
Place onto silpat
Press down slightly to flatten
Bake for 10 mins
Recipe yields: 20
For best experience Serve warm- chocolate must be melted when consuming!!!;)
Notice how sticky and wet the dough looks prior to baking.
If you don't eat all of these on the same day that you make them, then You Show Great Constraint!
