Snickerdoodles (gluten, dairy, egg, and refined sugar free)

2 C. Blanched almond flour
1/4 tsp salt
1/4 tsp baking soda
1/4 c. Coconut oil
1/4 c. Honey
1 Tbsp. vanilla
(coating: ground cinnamon)
Combine flour, salt, baking soda in bowl
Combine oil, honey, vanilla over double boiler
Add liquid ingredients to dry and stir to thoroughly combine
Using a rounded Tablespoon, scoop
out the dough, gently form dough into ball
Roll in cinnamon
Place all balls in cookie sheet lined with mat or parchment paper
Flatten with hand/ fingers
Bake 350 for 8-9 mins
