Triple Berry Squash Muffins!

2 cups mashed ripe bananas (tip: slice up very ripe bananas and place in freezer bag, then thaw when ready to use for recipes:)

Raspberries, Blueberries and Marionberries equal to 2 cups.

1 c. mashed butternut squash (Whole Foods sells Organic butternut squash in a can)

1/4 c. Coconut Oil

3 Large Eggs

1/4 tsp salt

                  2 tsp baking powder

2 c. Blanched Almond Flour

1 T. Vanilla

1 t. Cinnamon

The zest of 2 lemons and the juice of 1

Bake in muffin cups at 350 for 25- 30 mins.

You may want to blend your batter together in the sink...especially if you're messy like I am!

In the Future: I plan to NOT blend my berries into my batter. I really liked how these turned out, but I liked them better when I mixed the whole berries in Last with a spoon and could thus taste the individual berry flavors after the muffins were baked. The muffins made with whole berries also looked much prettier than the ones that you see pictured above with blended berries :)
