Pizza!!! And vegan paleo choc chip cookies!!!

I made a crust out of mostly almond flour with a little coconut flour and purple corn flour and olive oil, salt, baking soda and my homemade yogurt...The flavor was quite nice, but the texture was a bit grainy.

Purple Corn Almond Coconut muffins

1 c blanched almond flour
1/2 c purple corn flour
2 T. Coconut flour
1 1/2 tsp. baking soda
1/4 tsp. salt
5 eggs
1 T. Honey
1/4 c. Coconut oil

Thoroughly combine all ingredients.
Bake in mini muffin pan at 350 for 12-15 mins or until a fork comes out clean:)

- I put a little piece of aged cheddar in some of mine- I think one could also make them cheesy muffins with shredded cheese mixed into the better.

Mocha Madness!

I made Andrew a crazy Foamy mocha tonight! We have a really cool milk frother and an espresso machine and I love pretending like I'm a barista and making delicious coffee drinks for people:)

I tried to froth some almond milk to make myself a latte, but it didn't work out so well- and it was Definitely not picture worthy:)

Summer Peachy Tartlet:)

I had a baking frenzy this afternoon!
I brought some of the goodies to our friends house and some more are going to work with me tomorrow in celebration of a colleagues birthday:) woohoo:)

- Dark Theo Chocolate Macadamia Walnut cookies
- Fresh Plum Nutty Cookies
- Butternut Squash Cacao Nib muffins
- fresh summer peachy tartlets:)

Purple Waffles

Last night, I made almond flour waffles with Purple Corn Flour and Butternut Squash!
They turned out super soft and melt in your mouth delicious!!!

Vegan, Grain and Refined sugar free Nutty Cherry Power Cookie


Medjool dates
Unsweetened coconut
Agave Nectar

Possible Add-Ins/ Mix-Ins:

Dried cherries
Theo cacao nibs
Semisweet chocolate chips(the cookies with choc chips in them will not be vegan or refined sugar free- unless you use Vegan Chocolate- I suggest Theo 70% Dark Chocolate, chopped into chunks

The Stars of the Show: Organic Blue Agave Nectar, Trader Joes Semi Sweet Chocolate Chips, Whole Foods Unsweetened Shredded Coconut, Theo Roasted Cocoa Nibs, Dried Cherries, Raw Cashews, Raw Walnuts, Medjool Dates.
Dough with Cocoa Nibs on Top and Chocolate Chips on the bottom.
It was difficult to get the dough with the chocolate chips to hold together. Smaller chocolate chunks would be ideal. 

The Product Line:)
Chocolate Chip Cookie
Chocolate Teddy (chocolate chips were ground into the batter)
Cherry Cocoa Nib Choo Choo Trains
Cherry Cocoa Nib Cookies
Very Cherry Heart Cookies (Cherries were blended into the batter instead of left whole)
Cherry Thumbprint Cookie
I ended up over-cooking the Trains- So they became Graham Crackers:) We are going to a Smores Night tonight and I am going to bring the Train Crackers to use as my Gluten Free/Grain Free Cracker:)

For some of the cookies, I rolled out the dough and used cookie cutters.
This dough has Cocoa Nibs and Dried Cherries in it.
The Teddy's are headed for the oven:)

Labor Day

Breakfast of champs!
24 hour fermented homemade yogurt
Fresh Local Farmers Market berries

Making yogurt is actually fairly simple:)

Heat 5 cups of your favorite milk( not necessarily cow's milk- you can use goats milk, almond milk, coconut milk. Etc)
I use nonfat milk right now. Lactose bothers me, so I ferment for 24 hours to remove all of the lactose.
After the milk is 180-200 degrees F, take off stove and cool to room temperature- around 70 degrees F.
Then add some yogurt starter- you can also use a big spoonful of plain store bought yogurt as a starter:)
Then place in yogurt maker(YoGourmet) for 24 hours.
Then place in fridge for 8 hours.
Then enjoy:)
It takes forever, but it is so very worth it:)
