I tried a new gluten free all purpose flour that Costco just started carrying.
It is made with brown rice, flaxseed, quinoa, buckwheat and amaranth and supposedly it is a true 1 to 1 replacement for all purpose flour.
I used the recipe on the back of the pkg for pancakes, substituting almond milk and leaving out the sugar. They taste alright, but they seem undercooked in the center. Even the ones that I left on the heat until the were nearly burned. I'll need to play around with this flour some more before I decide whether or not I like it- TBD :)
