Eggs Kale n Bacon

2 eggs sunny side up
Topped with kale, cabbage, and shredded Brussels sprouts sautéed in olive oil salt and pepper
Topped with 3 small thin sliced strips of uncured bacon

I made Coconut Flour Chocolate Chip Cookies using this recipe (pictured far left and far right):

I also made Almond Flour Chocolate Chip Cookies using this recipe (pictured front and center and back center):
I omitted the unsweetened shredded coconut- although I plan to make them again with the coconut:)

Both of the recipes turned out SO well! I am thrilled!

Valentines Day at Farestart in Seattle!!

We had the most amazing meal at Farestart! Literally the best dinner I've ever had in my life!
Farestart is such an awesome non profit.
Farestart is a job training program for individuals who are homeless and in need of job training to get off the streets. Learn more on their website:
They are open for lunch M-F and for the Guest Chef Night for dinner every Thursday.
During Guest Chef night, the servers are made up of an all volunteer staff. Volunteers from Costco were serving the night we went:)

Curried Butternut Squash Soup

I made the curried butternut Squash Soup from the Gluten Free Goddess Blog:

It was absolutely amazing.
It tasted super creamy without dairy or gluten!
The Gluten Free Goddess adds a bit of sweetener to her recipe, but I omitted as I felt it was plenty sweet for me:) A batch of this soup lasted my husband and I for a few days as a side to our lunch and dinners :)
